Wholewheat chicken wraps

Flavourful, filling and wholesome, these wholewheat wraps are packed with juicy chicken and fresh, crunchy extras.

Ingredients
  

Cottage cheese spread

  • 200 g cottage cheese
  • 5 g fresh chives finely chopped
  • 5 g fresh parsley finely chopped
  • 5 ml 1 tsp hot English mustard
  • Salt and freshly ground black pepper to taste

To assemble

  • 700 g boneless chicken thighs
  • Olive oil for frying
  • 4 wholewheat wraps
  • 40 g baby spinach leaves
  • 250 ml 1 cup grated mozzarella cheese
  • 1 red or yellow pepper cut into thin strips
  • 40 g bean sprouts

Instructions
 

  • Place the cottage cheese in a bowl. Add the chives, parsley and mustard. Mix well, then season with salt and pepper to taste. Set aside in the fridge.
  • Cut the chicken into bite sized chunks and season with salt and pepper. Heat some olive oil in a frying pan, then fry the chicken pieces until cooked through. Set aside.
  • Warm the wraps as per the instructions on the pack. Spread a layer of cottage over each wrap, then layer the spinach on top. Sprinkle the mozzarella over the wraps, and top with chicken. Arrange the peppers and sprouts on top. Roll up and serve immediately.
