Pear & berry frozen yoghurt bars

A delicious frozen, fruity treat with a crunchy crumble topping.
Ingredients
- 5 ml 1 tsp butter
- 2 pears about 280 g, peeled and diced
- 150 g frozen mixed berries
- 10 ml 2 tsp honey
- 5 ml 1 tsp fresh lemon juice
- 5 ml 1 tsp vanilla paste
- 30 g rolled oats
- 25 g cake flour
- 30 g brown sugar
- 15 g coconut
- 2.5 ml ½ tsp ground cinnamon
- 40 g butter
- 375 ml 1½ cups full cream plain yoghurt
Instructions
- Melt the butter in a saucepan. Add the pears and cook, stirring regularly for 2 minutes. Add the berries and cook for another 2 minutes. Stir in the honey and lemon juice, and cook for 5 minutes, or until the fruit is tender and the liquid has reduced. Remove from the heat and stir in the vanilla paste. Set aside to cool.
- To prepare the crumble, preheat the oven to 160ºC and line a small baking tray. Combine the oats, flour, sugar, coconut and cinnamon in a bowl. Add the melted butter and stir well. Tip onto the tray and bake for 15 minutes until golden. Set aside to cool completely, then break up into crumbs.
- Line a 20 cm square baking tin with baking paper. Mix the fruit with 1 cup of plain yoghurt. Tip into the tin and spread into an even layer. Dot the remaining yoghurt on top and swirl in. Sprinkle the crumble over the top and press down lightly. Freeze overnight, then cut into bars. Store in the freezer.
