Cottage Cheese Chocolate Mousse
- 1 ½ cups smooth medium-fat cottage cheese – room temperature
- 3/4 cup melted milk chocolate
- 2 tbsp cocoa powder – sifted
- ½ cup icing sugar – sifted
In a medium-sized bowl add the cottage cheese, cocoa, icing sugar and melted chocolate. Using a whisk or a spatula gently mix these ingredients until you get a nice smooth pudding-like consistency.
Spoon the mixture into two small cups or bowls and pop them in the fridge for about half an hour to 40 minutes to chill. You can serve them with a small dollop of whipped cream and a dusting of cocoa if you like. Enjoy!
They can also be left in the fridge overnight.
