Corn on the cob

Ingredients
- 4 corn cobs
- ¼ cup smooth cottage cheese
- 1 tbsp mayonnaise
- Pinch of salt
- Grind of pepper
- ½ Juice from ½ a lime
- 1 tsp dried chili flakes
- ¼ cup parmesan cheese
- 2 tbsp chopped up coriander
Instructions
- Break 4 corn on the cobs in half
- Steam until cooked (about 15 minutes)
- While cooking mix together 1/4 cup smooth cottage cheese with 1 Tbsp. mayonnaise, a pinch of salt, a grind of pepper & juice of 1/2 a lime
- Once the corn has cooked and slightly cooled, roll it in the cottage cheese mix
- Place onto a serving dish (optional - use the corn husks to serve on)
- Sprinkle with 1 tsp dried chili flakes, then 1/4 cup grated parmesan cheese
- Finish off with chopped fresh coriander and a squeeze of lime juice
