Caramelised onion dip

Caramelised onion dip

Serve the dip with potato chips, crudités, or on potato wedges. It taste even better if prepared the day before seving.

Ingredients
  

  • 10 ml 2 tsp olive oil
  • 5 ml 1 tsp butter
  • 2 large brown onions about 350 g peeled and thinly sliced
  • 30 ml 2 tbsp water
  • 15 ml 1 tbsp balsamic vinegar
  • 5 ml 1 tsp fresh thyme
  • 2.5 ml ½ tsp fine salt
  • 2 garlic cloves crushed
  • 250 g smooth plain cottage cheese
  • 100 ml sour cream
  • crispy onion sprinkle for serving (optional)

Instructions
 

  • Heat the olive oil and butter in a pan. Add the onion and cook over a medium low heat for 10 minutes, stirring regularly. Add one tablespoon of water and continue to cook for another 10 minutes. Add the remaining tablespoon of water and cook for 10 minutes.
  • Add the vinegar, thyme, salt and garlic. Cook for another 15 minutes until soft and caramelised.
  • Transfer to a bowl and set aside to cool. Chop up finely.
  • Combine the cottage cheese and sour cream in a mixing bowl. Add the onion and mix well. Check the seasoning. Transfer to a serving bowl, top with crispy onion and serve.
