Asian-Inspired Nectarine & Feta Salad Jar

Thisfresh salad combines the sweetness of nectarines with the tangy creaminess offeta, topped with a delicious Asian-style dressing. A perfect summersalad!  If you are taking your salad onthe run, remember to place the dressing at the bottom of the jar or containerso that it doesn’t make your salad ingredients soggy.b

Ingredients
  

  • 2 Ripe nectarines or peaches, sliced
  • 1 Round of feta cheese crumbled
  • 1 Cup baby spinach
  • 1 Carrot diced
  • 1/4 Red onion thinly sliced
  • 1/2 Cup edamame beans steamed
  • 1 Cup cooked vermicelli noodles
  • Fresh coriander leaves or fresh basil if you’re not a fan of coriander
  • Optional: add ½ shredded chicken breast to each jar if you prefer more protein

For the Dressing Tip: double up on this dressing to keep in the fridge as a handy Asian dressing

  • 1 Tbsp. Reduced sodium soy sauce
  • 1 Tbsp. Rice vinegar
  • 1 tsp. Honey
  • 2 tsp. Sesame oil
  • 1 tsp. Fresh ginger grated
  • A pinch of red pepper flakes optional

Instructions
 

  • When it comes to assembling your salad jar it all comes down to how you layer it to ensure your salad stays crispy and crunchy.
  • Prepare the Dressing: In a small bowl, whisk together the dressing ingredients, then add about 2 Tbsp of salad dressing to each jar.
  • Assemble the Salad: First share the cooked vermicelli noodles between the jars, then layer them in the following order, feta, red onion, edamame beans, nectarine slices, baby spinach leaves and finish off with your fresh coriander (or basil).
  • Place into the fridge until needed: these Asian salad jars will last up to 3 days in a sterilized jar.
