Pear and yoghurt parfait

Create a sweet surprise that Mom will love! Kids can mix and layer this delicious pear parfait with creamy yoghurt, it’s the perfect Mother’s Day treat
Ingredients
Muesli
- 80 g rolled oats
- 50 g bran flakes
- 30 g flaked almonds
- 10 ml 2 tsp chia seeds
- 45 ml 3 tbsp almond butter
- 15 ml 1 tbsp honey
- 15 ml 1 tbsp coconut oil
- 5 ml 1 tsp vanilla extract
Poached pears
- 100 g white sugar
- 500 ml 2 cups water
- 3 pears about 500 g, peeled, cored and cut into quarters
- 1 whole cinnamon stick
- 4 whole cloves
To assemble
- 4 glasses
- 500 ml 2 cups full cream plain yoghurt
Instructions
- To make the muesli place the oats, bran flakes, almonds and chia seeds in a mixing bowl and stir together. Place the almond butter, honey and coconut oil in a separate microwave proof bowl or jug and warm for 30 seconds. Add the vanilla and stir well to combine.
- Pour the wet ingredients into the dry ingredients and mix well. Transfer to a plate or small baking tray. Spread the mixture out in an even layer and set aside for 30 minutes.
- To make the pears place the sugar and water in a pot. Stir over a low heat until the sugar has dissolved. Add the pears, cinnamon and cloves. Allow the pears to simmer gently for 15 - 20 minutes until tender. Remove from the sugar syrup and set aside to cool.
- Cut the pears into small bite-sized pieces. Place 2 tablespoons of pears into the bottom of each glass. Top with 60 ml of plain yoghurt then add 3 tablespoons of muesli on top. Divide the remaining pears between the glasses, then top with another 60 ml yoghurt and 3 tablespoons muesli. Serve immediately.
