There is no difference, except in colour. Yellow Cheddar contains added annatto, a natural, plant-based colourant.

White and yellow Cheddar cheese taste the same and are made according to a similar process. The only difference is that a natural, plant-based colourant called annatto is added to the cheese to make yellow Cheddar. It does not affect the flavour, fat conte or texture. People’s preference for white or yellow Cheddar cheese is mostly cultural.
