Manufacturers have historically prioritised these cheeses owing to their commercial popularity, both in the food service and retail sectors. Cottage or cream cheese and feta cheese are becoming increasingly popular, indicating a shift in consumer focus. However, this shift has not negatively affected the Cheddar and Gouda markets.
