Can I freeze cheese?

Yes, but preferably only hard cheeses. Freezing can affect the texture.

Read on for more info:

Hard cheese can be successfully frozen without altering the flavour. However, once defrosted, the cheese may be slightly dry and crumbly. Softer cheeses such as cottage cheese can also be frozen, but for a shorter time than hard cheeses (approximately 1 month). Soft cheeses may separate upon thawing.
